If the piano doesn’t have MIDI out then you can’t record MIDI. What you can do is plug the headphone plug into the ‘line in’ on the computer and record it as an audio signal.
You might have to experiment with the volume of the headphone signal because ‘line in’ is a standard volume.
There are MIDI programs that can mix MIDI and audio signals. You can record the piano on one track and MIDI instruments on other tracks.
